Clean eating: falafel with roasted veggie and mint sauce.

For those of you who love healthy eating but can’t stand being trapped in the kitchen for more than 30 mins, I have a great idea for a nice, alkalized meal…


Roasted veggie, falafel with mint yogurt sauce. 

Marinate your sweet potatoes, onion, and carrots in olive oil, sprinkle them with sea salt, pepper, and rosemary. Roast them in an oven for 30 mins.

And now you have a plenty of time to prepare falafel and mint sauce

How to make falafel in 10 mins!

400g can chickpea, rinsed and drained

garlic clove, chopped

a handful of flat-leaf parsley or curly parsley

1 tsp ground cumin

1 tsp ground coriander

1⁄2 tsp harissa paste or chilli powder

2 tbsp plain flour

2 tbsp sunflower oil

green salad, to serve

1 small red onion, roughly chopped

Pat the chickpeas dry with kitchen paper. Blend everything along with the onion, garlic, parsley, spices, flour and a little salt until fairly smooth, then shape into four patties with your hands.

Heat the oil in a non-stick frying pan, add the burgers, then quickly fry for 3 mins on each side until lightly golden. Job done!

Mint Sauce
2 tbsp greek yogurt

15 leaves of fresh mint (change the proportion to your liking)

sprinkle with lemon zest

Mix everything together in a blender and your sauce is ready.
